It was love at first bite when I demolished my first block of caramelsied white blueberry and blue corn early in 2016.
After stocking Wawa in my delicatessen Stella’s Pantry for 4 years, when creator Jade said she was ready to sell I couldn’t pass up the opportunity, so in 2020 Wawa moved from Melbourne to Gippsland – although the name Wawa pays homage to Western Australia (WA) where Jade grew up. While I had not envisioned working in the chocolate world, I love it and it works particularly well with my slightly obsessive compulsive nature!
From a young age I spent a lot of time with my grandparents, helping my grandma cooking, baking and preserving and “helping” my grandpa in his orchard and veggie garden.
Since purchasing Wawa from Jade in 2020 I’ve had a baby boy; Austin and sold my first baby, my deli- Stella’s Pantry. I’m using my skills I learnt from my grandpa to grow as many of the ingredients as possible and the cooking skills from my grandma come in handy for making the range, I’m currently in the process of mastering sourdough bread to incorporate into the toasted sourdough blocks!
The blocks are crafted from Valrhona couverture, Valrhona have earned B Corp Certification due to their positive impact for cacao producers with long term partnerships and traceability for 100% of cacao beans, fair pay is guaranteed for all producers.
The ingredients that go into each block are Australian sourced and I’m focusing on growing and making everything on my farm in Strzelecki where I produce the range.
